Don't fly the coop, but if you are looking for a few chicken recipes give these a try.


I was asked by Sara, for some good chicken recipes. It turns out during the pandemic we may have been ready to build a coop as there are a number of recipes we have tried and I thought I would share with you all.


We try for healthy recipes, but not all of these are.  We have been enjoying chicken thighs a great deal, but I know breasts are leaner and healthier.  For those that are curious, not all of them are from the Barefoot Contessa, and some of the healthier ones are actually Weight Watchers.


My go-to chicken recipes:


Let’s start with my go-to recipe for chicken breasts. This is from the Barefoot Contessa.  I found it as part of her chicken salad recipe.  The key here is these are bone-in and skin-on breasts.  I have never made the chicken salad, but consider it as a bonus.  https://www.foodnetwork.com/recipes/chicken-salad-contessa-recipe-1938131


Next is a roasted chicken and this one also comes from Ina Garten aka the Barefoot Contessa.  Really is quite easy.  For a kosher alternative, you could try olive oil instead of butter. https://barefootcontessa.com/recipes/perfect-roast-chicken.

Finally, for me in a pinch, with boneless chicken breasts.  I pound them somewhat flat and season with salt and pepper. I put some olive oil, Worcestershire sauce, and any other seasonings I might have for the day in a Ziploc bag.  I put the chicken in the bag, make sure they are all coated, and let them marinate for an hour and longer in the fridge.  I put them in an oven-ready pan or sheet and bake at 375 until done. I would start checking around 15 minutes.

Hot Summer Day Random Top 10

  I would like to do an odd top ten. Another First Father's Day

  Another First Father’s Day. 58 years ago, around this date, I celebrated my first Father’s Day. I don’t remember that one as I was about seven months old. This one is my first Father’s Day since my Dad passed, and there is much to share about my Dad. June is sort of my Dad’s month. It starts with his and my Mom’s anniversary, which would have been their 64th anniversary. There is, of course, Father’s Day, and then his birthday was June 24th. So, June this year has many dates to remember my Dad. That said, I am diverted to memories from yesterday evening. I was going to Savannah to see my Mom, my sister, and my family and to “check” in. I was lucky to find a reasonably priced flight from Longview, Texas. The only airline to choose is American. To say that American Airlines didn’t show their best service yesterday is an understatement, especially in the last leg of my journey out of Charlotte, but that is not the point of this Father’s Day.
